Shades of Gris” is a Pinot Gris with a very personal signature, not an easy everyday wine but one that expresses texture, depth, and character. It’s not about loud aromas here, but that warm, calm feeling of substance in the glass: round, structured, and pleasantly serious without feeling heavy. It’s a 100% Pinot Gris, aged in a large oak cask of 1,250 liters. This cask size makes a noticeable difference: compared to small barriques, a large cask has significantly less wood surface in relation to the wine. That means the wine absorbs fewer direct wood aromas, feels less “vanilla-like” or toasty, and stays clearer in its fruit and varietal character. At the same time, it still gains the benefits of oak aging: more calmness, harmony, and a finer evolution. You can think of it like wood not only lending “flavor” but helping the wine integrate and round out over time. An essential part of the style is the work with the yeast. The wine was regularly stirred (Bâtonnage). This keeps the yeast in suspension longer and gives the wine more structure and character—noticeably more body, a creamier mouthfeel, and greater depth overall. It’s worth remembering: lees aging and Bâtonnage are often used when a wine is meant to feel fuller, denser, and more complex, without adding sweetness.
