Description

The alcohol free white wine that Jean Marc offers in his range is the result of a development that has grown step by step in the winery. For a long time, the wine was dealcoholized in the classical way using external vacuum distillation. Entire batches were sent to Rüdesheim, where the alcohol was gently removed under vacuum. Although the method was reliable, Jean Marc was always bothered by the loss of some fine aromatic compounds. Many of the volatile elements that give a wine its liveliness disappeared during heating, and the result was clean but not always as expressive as he wished. In the summer, the winery switched to a new two stage system. Jean Marc describes it as a major step forward. First, the wine is separated by a special filtration device into an aromatic fraction and a fraction of water and alcohol. Only the second phase is then dealcoholized under vacuum. The aromatic components remain fully preserved and are later recombined with the alcohol free base. This creates a wine that does not resemble grape juice but preserves its original structure and character much more clearly. Jean Marc emphasizes how noticeably this shows on the palate. The alcohol free white wine tastes fruitier, fuller, and smoother than before. The texture is denser, the acidity more precise, and the overall expression remains close to what the wine once was before the alcohol was removed. For him, that is exactly the point. Alcohol free wine must remain real wine, shaped by the grapes, the soil, and the work in the cellar. Culinary wise, he sees the wine as very versatile. Thanks to its freshness and stable acid structure, it accompanies white meat as well as fish dishes. For Jean Marc it is a digestible partner, something to drink in the evening in a relaxed way without feeling heavy, or even during the week when one chooses to avoid alcohol. How large the market will become is still difficult for him to predict. But demand is increasing, and for him it is clear that alcohol free wine will occupy more and more space. This white wine shows where the journey can go. Technically precise, aromatically clear, approachable yet serious. An alcohol free wine that remains wine.

Schlink Alkoholfräie Wäin Wäiss shines in a pale straw yellow robe and releases a generous bouquet of white raisins honey floral tones and pollen. On the palate it is sweet and gentle with light to medium body where the aromatic blend of Riesling Chardonnay and Gewürztraminer brings both richness of flavour and a surprisingly fresh backbone. The short but expressive finish makes this alcohol free cuvée an appealing partner for soft cheeses mild Asian dishes rice based plates and a wide range of fruit honey or cream driven desserts.
