Description
The Pinot Noir Précoce is an early ripening variant of Pinot Noir and was originally planted on the estate by Lisa’s father. The main reason was its significantly earlier maturity. While most vines need around one hundred days between flowering and harvest, the Précoce often reaches maturity after about 85 days. This characteristic is a practical advantage in years with extreme weather conditions, as it provides more reliability in harvest planning. In the 2022 vintage Lisa used the variety in two ways. One part was traditionally vinified as red wine, while the other part was used as base wine for her Crémant. The variety has been regularly used in Crémant production for six to seven years now, as it offers structure, freshness, and stable ripening potential. It has therefore become a permanent component of the Crémant base. Aromatically the Pinot Noir Précoce clearly differs from the classic Mosel Pinot. It appears spicier, a bit more peppery and more intense, without losing elegance. The ageing takes place entirely in wood. The 2024 vintage matured partly in a new 600 liter cask and partly in traditional 225 liter barriques. Fermentation on the skins follows the classic method used in high quality red wine production. A key moment for the introduction of this variety into Crémant production was a study trip to eastern Germany, during which Lisa tasted a sparkling wine made from Pinot Noir Précoce. She was so impressed by the style that she decided to implement the idea in her own winery. Today this variety offers the estate several advantages: earlier ripening, climatic adaptability, and a distinctive modern aromatic profile.

In 2022, Lisa used it both for red wine and as base wine for her Crémant, where it has proven its value for years.
