For his alcohol-free sparkling wine, Nicolas works with an extraordinarily elaborate and highly precise process that goes far beyond the usual methods of dealcoholization. Although this process is many times more expensive than classical methods, it allows him to preserve the natural aromas of the wine almost completely. His goal is clear: to create an alcohol-free beverage that can confidently stand beside high-quality alcoholic Crémants in terms of taste. It is important to know that this product may not be called Crémant, since “Crémant” is a protected designation of origin and production method. A Crémant is defined by the traditional method of bottle fermentation – second fermentation in the bottle, aging on the lees, and further specifically defined steps. An alcohol-free product does not meet these criteria by nature and therefore cannot per definition be a Crémant. Nevertheless, this sparkling wine was deliberately developed to provide a high-quality, authentic alternative to Crémant. Some people colloquially refer to it as an “alcohol-free Crémant” – but correctly, it is a stylistic approach, not a protected term. Visually, the wine already makes a statement: an intense, radiant golden-yellow that shines brightly in the glass. On the nose, a precise interplay of juicy apple and fine pear unfolds, fresh and inviting. On the palate, it presents its elegant structure – harmonious, multi-layered, and with a depth rarely encountered in alcohol-free sparkling wines. While many alcohol-free sparkling whites are supplemented with high sugar levels to mask missing aromas, Nicolas keeps the residual sugar deliberately low, at only 3–4 g. As a result, the wine tastes clearly less sweet yet remains fully aromatic and well-defined. For Nicolas, this sparkling wine is not a substitute product but a conscious choice: a drink to be served with pride – as an aperitif, with light dishes, at events, after-work gatherings, or relaxing moments on the terrace. It shows that alcohol-free does not mean renunciation but opens new freedoms: to toast, enjoy, and celebrate in style – while remaining clear-headed. The steadily growing market confirms this trend: high-quality alcohol-free alternatives have long since become a category of their own. And Nicolas’s interpretation impressively proves how much elegance and true experience are possible even without alcohol in the glass.

Les Bulles shows a deep yellow hue in the glass and an effusive bouquet of green apple grape citrus and rhubarb that instantly signals a joyful alcohol free style. On the palate the bubbles are strong and direct carrying a medium sweetness that is smartly countered by bright acidity so the wine feels crisp despite its generous fruit. The short clean finish makes it a natural choice for aperitif service with fresh cheeses shellfish mild Asian dishes and fruit based desserts especially when an uplifting but alcohol free option is desired.

Visually brilliant in golden yellow, it shows notes of apple and pear, with fine bubbles and elegant depth on the palate. With only 3–4 g residual sugar, it is noticeably dry yet fully expressive – a stylish, authentic alternative to classic Crémant.
