Description

The Crémant "Signature" represents the estate's most ambitious Crémant line and deliberately differs from classic Crémant de Luxembourg. The cuvée undergoes significantly longer lees aging than usual giving it a creamier texture finer perlage and aromatic maturation notes. This extended lees aging produces brioche nut and light oxidative notes reminiscent of traditional Champagne style.​ This style was originally developed by Lisa's father who wanted to create a higher quality more complex line. To emphasize the cuvée's special character visually a different bottle shape was chosen distinctly setting it apart from standard Crémant. The wine was also matured in a more oxidative style to generate greater depth and fullness. For that time this approach was quite unusual in Luxembourg.​ Crémant accounts for about half of total production with "Signature" holding central importance. The assemblage is adjusted annually depending on base wine development while maintaining a clearly defined style: more intense mature structured and with longer finish than classic Crémant. The cuvée also serves as the house's technical showcase.​ The estate disgorges in small batches only as needed keeping the wine fresh yet close to the desired maturity profile. "Signature" demonstrates the precise consistent work from base wine evaluation through lees aging to final assemblage.​
