Description
In the characterful Göllebour site whose soils are rich in shell limestone this remarkable Chardonnay grows. The around 20 year old vines root deeply in this mineral subsoil giving the wine its clear precise structure and elegant natural tension. After harvest the grapes were carefully destemmed also called "entrappen" to preserve particularly pure and fine aromatics. Then followed a 14 hour maceration on the skins a deliberate step that adds extra depth: aroma compounds light tannins and fine melt combine in the must laying the foundation for later complexity. The wine was fermented spontaneously in a 500 liter oak barrel thus without added cultured yeasts solely by natural yeasts on the grapes and in the cellar. This original fermentation method ensures authentic aromatics an individual signature and particularly multifaceted wine development. The eight month aging in the barrel rounded off the texture added fine wood nuances and provided harmonious depth without covering the freshness. In the glass a Chardonnay appears that is equally powerful and elegant: mineral marked by shell limestone subtly supported by the barrel and carried by lively precise styling. A wine that not only shows its origin but proudly presents it multifaceted balanced and full of personality. A character strong Chardonnay for connoisseurs who appreciate authenticity finesse and craftsmanship precision.
